Super Summer Recipes

It's July, which means summer entertaining is in full swing!  To help you prepare for your alfresco events, Nikki and Kerri are sharing two of their favorite go to recipes this summer!

123 Aperol Spritz

Nikki discovered Aperol Spritz last summer and she was instantly hooked!   The combination of aromatic aperol, prosecco, and sparkling water creates a light and refreshing cocktail, perfect for warm and sunny afternoons.  And the best part is, there are only three ingredients, so it's easy to assemble.  Here's what you need for an 8 oz serving:

  • 1 ounce club soda or sparkling water
  • 2 ounces Aperol 
  • 3 ounces prosecco  

Add the ingredients to a wine glass filled with ice, garnish with an orange slice, and finito! Easy as 1, 2, 3! 

Zesty Lime Shrimp and Avocado Salad*

This is one of Kerri's favorite go to appetizers for the summer. It's super light with a ton of flavor and easy to make.  Serve it with Tostitos or my personal favorite, Siete Lime Tortilla chips.  

INGREDIENTS

  • 1/4 cup chopped red onion
  • 2 limesjuice of
  • 1 tsp olive oil
  • 1/4 tsp kosher saltblack pepper to taste
  • 1 lb jumbo cookedpeeled shrimp, chopped*
  • 1 medium tomatodiced
  • 1 medium hass avocadodiced (about 5 oz)
  • 1 jalapenoseeds removed, diced fine
  • 1 tbsp chopped cilantro

INSTRUCTIONS

  • In a small bowl combine red onion, lime juice, olive oil, salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
  • In a large bowl combine chopped shrimp, avocado, tomato, jalapeño.
  • Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
